Juicy Chicken Fillets with Peppers

Ingredients:

  • 2 chicken fillets, cubed
  • Salt and black pepper to taste
  • 1 cup flour
  • 2 eggs
  • 1/2 cup apple cider vinegar
  • 1/2 tbsp ginger paste
  • 1/2 tbsp garlic paste
  • 1 tbsp sugar
  • 1 red chili, minced
  • 1 tbsp tomato puree
  • 1 tbsp paprika
  • 4 tbsp water
  • 1 red bell pepper, seeded, cut into strips
  • 1 green bell pepper, seeded, cut into strips

 

Preheat the air fryer to 350 degrees F. Sift the flour in a bowl and whisk in the eggs, salt, and pepper. Coat the chicken cubes in the flour mixture. Place them in the frying basket. Spray the cooking spray and AirFry for 8 minutes. Shake the basket, and cook for 6-8 more minutes until golden and crispy.

In a bowl, add apple cider vinegar, ginger paste, garlic paste, sugar, red chili, tomato puree, paprika, and water and mix well with a fork. Place a skillet over medium heat and spritz with cooking spray. Stir in the pepper strips and stir-fry until sweaty but still crunchy. Pour the chili mixture over, stir, and simmer for 10 minutes. Serve the chicken drizzled with the pepper-chilli sauce.
