These really do solve a problem and I can imagine many instances where using the Lay-it-Flat books add to safety. Especially when say canning. The last thing you need while surrounded by multiple pots of boiling water, is your cook book breaking free from the utensils crock and dinner plate combo used to keep your bound book open. Honestly, you would be better off using a scroll. Right? Just a thought.
